School nights are basically survival mode in our house.

Between homework battles, last-minute project emergencies (why do kids always remember their diorama is due tomorrow at 8pm?), and the endless driving to activities, dinner can feel impossible.

That’s why my air fryer has become my secret weapon.

It’s faster than the oven, doesn’t heat up the whole kitchen, and somehow makes veggies that my kids will actually eat.

After a ton of trial and error (and some truly questionable experiments), I’ve rounded up some family-approved recipes that take minimal effort but deliver maximum satisfaction.

1. Crispy Parmesan Zucchini Fries

Air fry at 375°F for about 15 minutes, shaking halfway through. While still hot, toss them in 1/4 cup buffalo sauce mixed with a tablespoon of melted butter.

Pop them back in for another 5 minutes until crispy. Serve with celery sticks and blue cheese or ranch dressing. My husband actually requests these instead of takeout wings now, which is basically a miracle.

4. 20-Minute Mediterranean Chicken Skewers

These skewers are in regular rotation at our house because they’re super versatile. You can serve them with rice, in pitas, or on top of a salad. And they cook in the time it takes to help with spelling homework.

Cut boneless chicken breasts into 1-inch cubes. Toss with 2 tablespoons olive oil, 1 teaspoon dried oregano, 1 teaspoon garlic powder, juice of half a lemon, salt and pepper.

Thread the chicken onto skewers, alternating with chunks of bell pepper, zucchini, and red onion. If using wooden skewers, soak them first!

Marinate 1 pound of chicken tenders in 1 cup Greek yogurt, 1 tablespoon olive oil, 2 cloves minced garlic, juice of half a lemon, and your favorite herbs for at least 30 minutes.

Remove from marinade and coat lightly in a mixture of panko breadcrumbs, a little parmesan, and paprika.

Spray air fryer basket with olive oil spray. Cook at 375°F for about 12 minutes, flipping halfway through.

The yogurt marinade keeps the chicken incredibly tender while the panko gives that satisfying crunch. I always make extra because they’re perfect for lunch boxes the next day.

9. Honey Garlic Glazed Tofu Bites

I’m not usually a huge tofu fan, but these honey garlic bites converted me. They’re crispy on the outside, tender inside, and coated in a sticky-sweet glaze that’s irresistible.

Press a block of extra-firm tofu between paper towels with something heavy on top for about 30 minutes. Cut into 1-inch cubes.

Toss with 1 tablespoon cornstarch, salt, and pepper. Air fry at 400°F for 15 minutes, shaking halfway through.

Meanwhile, mix 3 tablespoons honey, 2 tablespoons soy sauce, 2 minced garlic cloves, and a splash of rice vinegar in a small bowl.

Toss the crispy tofu in the sauce, then return to the air fryer for another 2-3 minutes until the glaze caramelizes.

Spread in a single layer in your air fryer basket. Cook at 400°F for 8 minutes, shaking halfway through.

Remove stems from about 12 large button or baby portobello mushrooms. Chop the stems finely and mix with 4oz softened cream cheese, 1/4 cup grated parmesan, 2 minced garlic cloves, and some chopped fresh herbs.

Stuff each mushroom cap generously with the mixture and sprinkle with a bit more parmesan on top.

Air fry at 370°F for about 10 minutes until golden and bubbly. The mushrooms get tender while the filling gets this amazing crispy top.

I discovered these by accident when I had mushrooms about to go bad in the fridge and needed a quick dinner side. Now my oldest requests them specifically, which is wild because she used to pick mushrooms out of everything.

Mix 1 pound ground chicken or turkey with 1 tablespoon each of soy sauce and hoisin sauce, 1 teaspoon sesame oil, and 1 teaspoon grated ginger.

Place mixture in a thin layer in your air fryer basket. Cook at 380°F for about 8 minutes, breaking it up halfway through.

While it cooks, chop water chestnuts, mushrooms, and green onions. Mix these into the cooked meat along with an additional tablespoon of hoisin sauce.
